Everything You Need to Know About Beef Wellington
The past few weeks have been quite fun.
Every time someone walks past the table and spots our newest dish, it's almost the same reaction.
"Eh Chef, got Beef Wellington ah?"
Yes. Finally!!
This is one dish I've wanted to put on the menu for quite some time.
People see Beef Wellington and think, "It's beef wrapped in pastry only what."
I also wish it was that simple.
The first few versions we made didn't even make it out of the kitchen.
One looked beautiful, but the beef was over. Another had nicely cooked beef, but the pastry wasn't crisp enough.
Then there was one where the mushrooms held too much moisture.
Straight back to square one.
That's the thing about Beef Wellington. Every small detail makes a difference.
The mushrooms have to be cooked slowly until they're almost dry.
Otherwise the pastry turns soft. The beef has to be rested properly. The pastry has to come out golden and flaky, while the beef inside stays juicy.
Miss the timing by a few minutes and everything changes.
One thing I've noticed since we introduced it to the menu always makes me smile.
The Beef Wellington arrives at the table and before anyone touches it, the phones come out.
"Eh wait, don't cut first!"
Everyone laughs…
Someone takes a few photos…
Then comes the best part.
The first slice goes through the golden pastry, everyone leans in for a look, and after the first bite... the table goes quiet.
As a chef, that's one of my favourite moments.
Just people enjoying good food together.
Most of the preparation happens long before dinner service even starts.
By the time you place your order, we've already spent hours getting everything ready.
That's also why we didn't rush putting it on our menu.
We kept testing it… The team kept tasting it.
Sometimes someone would say, "Almost there."
Then we'd change something again.
One evening, after another round of tasting, everyone took a bite and went quiet for a few seconds.
We looked at each other and someone finally said, "Okay lah. This is the one! "
That was the moment we knew.
Only then did our Beef Wellington become part of the Black Pearl Steakhouse menu.
💡 One small tip. Don't rush through it.
Cut through the pastry slowly. Have a bite with everything together - the beef, the mushrooms, the pastry.
🍷 Then have a sip of red wine.
That's how I enjoy it.
Food always tastes better when you slow down.
